Welcome Summer! - Mango Fruit Salsa




















1 mango
1 banana
6 strawberries
1/8 of an onion
1/2 a lemon
1/4 of a cucumber
2 tbsp cilantro 


1. Peel the mango with a peeler. Silce the fruit away from the large seed in the center. Try not to cut into the seed. Chop the mango slices into cubed chunks and place in a large salad bowl. With mango it's a little tricky so do the best you can. 


2. Chop the onion, cucumber, cilantro and strawberries and toss in a bowl with the mango.  


3. Squeeze the a generous amount of lemon juice over the entire mix. 


4. Slice the banana and add to the mix last and stir in gently. 


This is great with flax seed chips or your favorite brand of low sodium chips. 


* 2 tbsp of agave nectar and 2 tbsp of Malibu Rum and toss once more. 
add 1 tsp of Smart Balance to a small pot and scoop 1 cup of your Fruit Salsa into the pot. Warm the salsa and pour over non-dairy ice cream or your favorite flavor sorbet'. Eat responsibly...and welcome summer!
