I got this yummy recipe from the Clean Eating Magazine…
I made it for my family of 5 tonight. So good! Thumbs up from all the boys here.
Ingredients:
* 2 tsp minced orange zest
* 1/2 cup 100% orange juice
* 1 T raw honey
* 1T minced fresh ginger
* 1 T minced garlic
* 2 tsp low-sodium tamari (a type of soy sauce)
* 1 tsp red pepper flakes
* 1/2 tsp sea salt
* 1 lb top sirloin steak, trimmed of visible fat & cut crosswise into thin strips
* 1 lb broccoli, trimmed & cut into 2-inch pieces
* 1 lb whole-wheat pasta
* 1 T safflower, sunflower or grape seed oil
* 1 large red bell pepper cut lengthwise into thin strips
* 1/4 cup grated low-fat Parmesan cheese
Directions:
1. In a medium bowl, whisk orange zest, orange juice, honey, ginger, garlic, tamari, pepper flakes and salt. Add steak and toss to coat. Set aside at room temperature to marinate, 10min – 1 hour.
2. Bring a large pot of water to a boil. Add broccoli and cook for 1 minute, until slightly wilted. Transfer broccoli to a large bowl and set aside.
3. Return broccoli cooking water to a boil. Add pasta and cook according to package directions. Then drain and transfer pasta to a large serving bowl and set aside.
4. Meanwhile, in a large nonstick saute’ pan, heat oil on high. Remove steak from bowl and transfer to pan, reserving marinade. Cook, turning constantly, until brown and tender, about 3 mins. Reduce heat to medium-high to prevent burning. Add broccoli and bell pepper and saute’, stirring occasionally, for 1 min. Add reserved marinade and saute’ for about a minute. Spoon steak mixture over pasta and toss to coat. Top with Parmesan.
