I was looking forward to this meal all day. There aren't many flavors that go better than blue cheese and mushrooms. Even steak or meat lovers will enjoy this meal. Make sure to get a good quality blue cheese, it will be well worth the money. When you use a flavorful and strong cheese you don't end up needing a large quantity to get the flavor you need.
I had extra artichoke foccacia from dinner over the weekend that needed to be used up. It ended up being perfect for this meal, but you could use good sliced bakery bread and the results would be just as good. Serve with a salad and dinner is served.
Blue cheese and Portabella Sandwich with Foccacia
Makes 4 sandwiches
Ingredients:
1 Tbsp olive oil
1 Tbsp garlic
3 large portabella mushrooms, cut into 1" slices
1 onion, sliced thinly
1 tsp soy sauce, low sodium
1 tsp worcestershire sauce
Fresh foccacia (cut into 4" squares) and cut in half
1/2 cup crumbled blue cheese
4 slices tomato
Directions:
1. Heat olive oil in a pan over medium heat. Add garlic and sauté for 1 minute.
2. Add mushrooms, onions, soy sauce, and worcestershire sauce. Cook for 5 minutes.
3. Place mushrooms atop the bread. Sprinkle 2 Tbsp blue cheese on top. Place under broiler (about 3" away) for 5 minutes or until cheese is melted. Top with tomato.
