Turkey Meatballs

Meatballs are a comfort food for many. In my house we don't do too much red meat, party due to increased costs. When we do we typically have a nice grass fed cut and really enjoy it. Ground lean turkey or chicken is a great alternative to ground beef. I typically bake my meatballs, but was afraid it would dry out the turkey meat. Instead, I lightly pan fried them and they were so moist and delicious. 

Meatballs naturally go with pasta, but they can also be served with whole grain rice or on a crusty bread as an open-faced sandwich. Did you know that a serving of pasta or rice is one cup? To keep portions in check serve with plenty of low calorie vegetables! Following a low carb lifestyle? Fill your plate with your favorite vegetables and call it a meal. 

Turkey meatballs
Makes 6 servings

Ingredients:
1 pound of lean ground turkey
2 cloves garlic, chopped
1/2 cup sweet onion, finely chopped
1 Tbsp Italian seasoning
1 egg, beaten
1/4 cup bread crumbs
1/4 cup grated Parmesan cheese 
Salt and pepper, to taste 
2 Tbsp olive oil
1-2 cups of favorite marinara sauce 

Directions: 
1. Mix all ingredients in a bowl. 
2. Roll into 1.5 inch meatballs (should make about 16).
3. Heat olive oil in a frying pan over medium heat. When oil is hot, add meatballs and cook about 5 minutes per side. Add tomato sauce and cook additional 5 minutes.
